1 year old birthday cake

Since my little boy came to this beautiful world, i wanted to make him a 1 year old birthday cake that he can truly enjoy. I had a few ideas, but somehow I felt that they are not good enough.....until i came across this 100% fruit cake at very last minute.

Nothing fancy. The wordings are melon, cut with alphabet cutters. Cakes are 8 inches watermelon and 6 inches watermelon. Decoration is just whatever fruits that are available. Most important we had fun 'making' the cake and finishing it.

Happy Birthday my dear boy. Mummy will make birthday cakes that grow with you every year. Love you.

Aglio e Olio

When I am lazy, I will cook this simplified version of Aglio e Olio. So, here you go, a lazy recipe in a lazy post.

All the ingredients can be found in Aeon(old Jusco). A pack of chicken fillet, a box of button mushroom, peeled garlic, minced chili. As for spaghetti, normally I use the thinner one, because this dish is lighter in taste.

Stir fry the button mushroom in dry pan with medium heat until you could smell mushroom and you could see water coming out from mushroom. Continue for a few minutes then set aside.

Stir fry the garlic in generous amount of cold press extra virgin olive oil.

Add in chicken fillet and button mushroom. Before this, marinate the chicken with light soy sauce, pepper and a little bit of water for 15 minutes. Add in cooked spaghetti and minced chili. Add sea salt to taste. Finally add some coarsely ground fresh black pepper.

A light meal is completed. I cook this again and again, not only because it is fast, but also it contains all the healthy ingredients, like garlic, olive oil, fat free chicken fillet, button mushroom.....

Braised Pork Rib with Mushroom and Water Chestnut

Usually when I asked what meat dish he would want to have, he would usually go for pork rib. He said the pork rib dishes in restaurant are not only expensive, but also come in very small portion. Furthermore, I will buy the more expensive soft rib. But after I have repeated the same few rib recipes many times, one day I decided to try something different.

Marinate the pork rib with light sauce sauce and white pepper for an hour. Mix with some corn flour and stir fry with some cooking oil. Set the rib aside.

Leave some oil in the wok. Stir fry some minced garlic and sliced ginger until fragrant.

Add in mushroom, oyster sauce, salt, light soy sauce, sugar and water. Bring to boil.

Pour the mixture into the pot with pork rib and simmer for an hour. Half way, add in water chestnut. Then, open the lid and turn to maximum heat for a while to get a slightly thicken sauce.

I like this dish very much. Although it is a meat dish, but I don't feel that heavy with the water chestnut. I think it will appear on my dining table again and again.

Fruit Platters

When I was looking in my photo folder for a new dish that I have captured, well, I could not locate it, but then I found these fruit platter photos. These photos were captured in the 9 months that I was being pampered. After work and after dinner, I would be resting on the sofa waiting to be served with a plate of mixed fruits. Yes, I did not take good pictures but back then I was just trying out the new lens. Lame excuse. :p Oh, I started to miss those days. Now I am just a maid at home. Sob sob.

And in return, I cooked him his favourite one dish meal, Taiwanese Stew Pork Rice(view recipe). Being lazy, I cooked 600g of pork, hoping to cover lunch and dinner. When lunch time came, I was shocked to find out that he served almost all the pork in two bowls of rice. And he told me that he thought that was for one meal. Oh, he is definitely a carnivore.

By the way, I am back and will continue to post more dishes soon. Hopefully. :)
