Millet raisin steamed cupcakes
I like to make this for tea break as it can be done in 5 to 10 minutes(up to before steaming). Then there is another 10 to 15 minutes steaming and tea break is ready. As I am making this more and more often, I have changed the measurement for flour from gram to tablespoon. That means I dun even have to take out my weighing scale now. :)
8 tbsp organic unbleached low protein flour
4 tbsp organic unbleached millet flour
1 tsp organic aluminium free baking powder
1 organic free range egg
2 tbsp organic brown sugar
70ml milk(i used water as I have not introduced dairy to my boy)
1 tbsp organic extra virgin olive oil
12 or more organic jumbo raisin, cut to smaller pieces
1. Sift flour and mix with baking powder in a bowl.
2. In another bowl, beat egg and sugar until thicken.
3. Fold in flour mixture
4. Mix in milk, oil and raisin
5. Steam over medium heat for 10 to 15 minutes.
This recipe yields 12 mini cupcakes.
3 of us finished it at tea break. None left. :)
Pandan Coconut Steamed Cupcakes
110g organic unbleached low protein flour or cake flour
1tsp organic aluminium free baking powder
2 tbsp organic brown sugar
1 organic egg
80ml blended pandan juice, concentrated
1tbsp virgin coconut oil
1. Sift flour abnd mix with baking powder in a bowl.
2. In another bowl, beat egg and sugar until thicken.
3. Fold in flour mixture.
4. Mix in pandan juice and oil.
5. Steam over medium heat for 10 to 15 minutes.
This recipe makes 12 mini cupcakes.

Toddler menu #1(at 16mo)
It is hard for me to take picture for lunch now. After I cook Phin Zhe's lunch, while wk is feeding him, I have to continue to cook for adults. Then we will have lunch. After that I will start to prepare for tea break, then dinner. Unless I am cooking same dish for everyone, else dinner time will have to repeat what we do for lunch. Wk feeds phin Zhe, I continue to cook and we have dinner later. But today I managed to capture some pictures, maybe I am getting more and more efficient? ;)
Lunch for little one:
Mixed grain porridge - plain, unflavoured
Onion salmon soup - Onion and salmon bone simmer in one bowl of water for 20mins. Then, add in salmon cubes. Once cooked, remove the salmon cubes.
Cheesy salmon - Sprinkle some cheddar cheese on the salmon cubes
Spinach - Heat grape seed oil, stir fry minced garlic, add in spinach, add some water, simmer for a while until soft
For tea break, we have some pandan mantou and homemade soy milk. Will blog about pandan mantou when I have time. But I guess it is not difficult, just minor tweak from my normal mantou recipe.
Then, I quickly cooked and packed dinner as we were going to the beach. Dinner menu was macaroni and potato leek soup. Did not expect the macaroni to turn out so delicious. :) And Phin Zhe finished off his portion and also my portion of soup. :) A tired but fruitful day.

Breakfast plate #2
Every weekend, I will try to do more cookings, especially dishes that I dun hv the luxury to cook on weekdays. Breakfast for this Saturday was avacaodo banana rolls and pink guava.
Crepe - 200g flour, 1 egg and enough water to form the batter.
Avacado Banana Spread - 1 avacado, 2 medium banana
Pink Guava - just wash and cut

Breakfast plate #1
Good morning Sunday.
Finally I can cooked a breakfast plate that all of us can eat. My boy is 15.5mo now.
The breakfast plate has
1. cheese omelette
Add Kerrygold cheddar cheese flakes when the egg is almost ready and fold it in pan.
2. steamed baby asparagus
3. Potatoes and white button mushroom side
Stir fry mushroom slices in Purity Farms ghee oil until fragrant, then mix in steamed potato cubes.
4. Dried cranberries
I love sweet treat, so it is more for me. :)
We also have a bowl of papaya cubes which I did not able to snap a photo. Breakfast with toddler is always messy. ;) Nice breakfast always make my day. Lovely sunday morning.

Molasses Wheat Mantou
Yes, it is mantou again. The same basic recipe, but able to tweak to many different flavour mantou.
Ingredients : 250g unbleached flour, 50g whole wheat flour, 2tbsp molasses sugar, 1tbsp extra virgin olive oil and 1tsp active dried yeast disolved in 70ml luke warm water
And finally my silicone pastry mat has arrived. No more messy, dusty and oily table top to clean after making mantou. Love the grids on it too. :)
