Coconut jam(Kaya)



In just a few year of time, Old Town kopitiam and the same concept of cafes have been expanding rapidly and spread around every corners in Malaysia. Since then, toast bread and coffee are not only for breakfast, but also lunch, dinner and tea break. So, I was tempted to make my own kaya, to be served with bread or glutinious rice.

I did it together with my mum last Sunday. We planned to make more so that my mum could bring some home. But the 10-egg recipe turned out to be a lot. Really a lot. It was like 7 times of what is in the photo. :p

Since it was a lot, I had a hard time looking for suitable cookwares to do the double boiling. All the pots had been taken out. In the middle of changing pot, we accidentally added some water to the mixture. :( Anyway, we moved on and this is the outcome.

Comment that I received was the taste and fragrant were all right, but the texture could be smoother. Not sure if it is caused by the extra water or my techniques need to be improved. :p Will make it again.

  1. 10-egg recipe for 100 sandwiches? Maybe it was the extra water =) How would you and your family finish the 7 bowls of kaya? Guess you have ask your mum to bring back for distribution to your neighbors =D Next time can try make a 1-egg recipe =)

  2. Last time, I made 5-egg kaya. So this is double. The extra water had diluted the Kaya. Therefore I dare not to distribute. Not sure how my mum is going to finish it.

    I bought it from Penang Click & Snap(near Komtar), RM1510 for black LX3,screen protector and 4G SDHC card. Few shops there sell at RM1550 for the same package.

  9. You need to keep stirring the kaya while it is being double boiled.

  10. Sai Mun, not occasionally meh? The double boil takes at least 4 hours, are you sure I need to stir for 4 hours?

  11. You hv to keep stirring and scrap the bottom, especially towards the end.

    Anyway, being slightly lumpy is a characteristic of homemade kaya.
